<p>We know that when 17 families build a communal barn, it is 1/17th of the cost for each family, a big savings. But building individual energy efficient homes is a much harder nut to crack. What bubbled to the top were many of the things we already knew. There is no silver bullet, but there are many things that can be done to lower costs. Below is a list of the topics we discussed. Most of you asked to be included in the continuing conversation and working groups to dig deeper into these topics. So I almost missed out on an incredible dinner. Only because I love curry, did I dare to take the tiniest taste test. Now I&#8217;m hooked!</p>
<p>This meal was grown from Judy &amp; Ann Margaret&#8217;s and Katywil&#8217;s gardens (well, not the coconut and curry).</p>
<p><strong>Curried Parsnip Soup</strong></p>
<p>4 cups peeled, cut up Parsnip (about 1 1/2 pounds untrimmed)<br />
1 medium size Onion, chopped<br />
1 lg. Clove Garlic, chopped<br />
1T Coconut Oil<br />
1T mild Curry*<br />
4 cups Chicken or Vegetable Stock<br />
1 cup Coconut Milk<br />
Sea salt to taste (optional)</p>
<p>1. Peel and chop parsnip, set aside<br />
2. Peel and chop onion and garlic (keep separate)<br />
3. Melt Coconut oil in 2-4 qt soup pot. Add chopped onions and saute several minutes.<br />
4. Add chopped garlic and curry powder. Stir well to distribute curry. Saute severalminutes more keeping an eye on it and stirring frequently so no burning occurs.<br />
5. Add stock and chopped parsnip, bring to boil, turn heat down to medium-low, coverand simmer about 25 min. or until parsnips are soft.<br />
6. Remove from heat. Allow to cool slightly, then wither transfer to a blender or use astick blender to make a creamy soup.<br />
7. Add coconut milk; if serving right away return to soup pot to heat through. Add salt totaste.</p>
<p>* this amount gives a very low key curry ﬂavor in background and not a lot of heat. Feel free to use a hotter curry or and/or adjust amount to your taste.</p>

			<content:encoded><![CDATA[<p>Katywil extended family dinner was wonderful, although we missed Bill, who is traveling. We at Katywil, have so much to be thankful for this year including the amazing, diverse community that we are becoming and our bountiful dinner which we either grew or purchased from neighboring farms. We are especially grateful to our very own turkeys who contributed to the delicious meal in exchange for the best life we could possibly give them.</p>

			<content:encoded><![CDATA[<p><img class="alignleft size-full wp-image-656" title="mound490" src="http://katywil.com/wordpress/wp-content/uploads/2011/11/mound490.jpg" alt="" width="490" height="290" />A group of students from UMass came to Katywil and to the Colrain Seed Farm for a fun day of planting wheat seeds, visiting Katywil, and baking pizzas in the wood fired earthen oven. Karen Sokolow, a senior and member of Hillel at UMass, founded a group called <em>Sustainable Jews</em>, to focus on ecological issues in the Jewish community on campus. She learned about Katywil at the summer NOFA conference and wants to explore sustainable lifestyles, so Katywil was their first field trip! Since Karen is graduating soon, she reached out to freshmen, so the group will continue, always thinking of sustainability! Eli, at Colrain Seed Farm gave them organic heritage wheat seeds to take back and plant on campus. It was a great day!</p>
